All of our diving was freediving. it was all done from boats. it was all in 40-60 foot range. Most species we went after were barracuda, groupers (which happen to be smarter than some groupers ive seen in other places) and mackrels. we saw some sailfish near some baitballs, but we didnt have the right equipment to take on such a formidable pray.
if you are going from a tourist area such as Los Roques, you will probably be able to arrange for a small local fisherman to take you out, a dive charter, or a fishing charter. Knowledge of the local language is imperative for dealing with local chix, although ive prettended to only know english (im tri-lingual) and a bottle of scotch was good enough for them...
we also saw lots of snapper, but were going mailny after other fish.
