in Japan its mostly eaten raw. The sashimi is given one of three names based on the size of the fish it came from kampachi, hamachi or buri. I caught my first kampachi a few weeks ago. Yes, thats the smallest sized amberjack

The neck area of the large ones, buri, is often simply grilled with salt and served with white radish, its really delicious.
