If you search around for it there was an interesting thread by dave mullins in which he ran tests constant weight on all fin type, plastic,fiberglass,carbon, on bi-fins and provided data for all the dives, it basically implied there was not much difference between the materials and the performance. I think the bigger concern might be how much angle and comfort and fit of pockets and blade stiffness choices that will vary with diving style and build. I would contact manufacturers, they might be able to guide you to a good choice.
