I cheat with the bass. Red onion, a good helping of 5 min marinade by Lea & Perrins (either Med sun dried tomato or lime and corriander), a little olive oil and a bit of seasoning. Slice the side of your fish, rub in the marinade into the slices and the gut hole, lay him on the onion and put more onion on top (this helps keep the fish away from direct heat. more for the BBQ though) and wrap your tin foil around.

Oh, and a bottle of stella. Enjoy
