Amberjacks in the Med

Thread Status: Hello , There was no answer in this thread for more than 60 days.
It can take a long time to get an up-to-date response or contact with relevant users.
It may have a grey-blue top part but the yellow parts are dominant in the AJ.
 
alot of the color is dependent on the freshness of the kill, clarity of the water on that given day, attitude of the fish, ect. Look at the second one I posted compared to the first. Both are fresh but I knocked the begezus out of the second one and It left him colorless. Fish can change their color dramatically. When AJs get excited that stripe through the head will become more pronounced and so on.
 
And some AJ's from South Florida for comparison. BTW, the bigger one had plenty of worms but my buddy (Kostas, on the left) ate the fillet after cutting out the meat with the worms.

I hvve never heard of AJ gettting worms. Is it a local problem or do they all suffer from this?

Where are the worms?

The worms are some type of parasites that are found inside the actual flesh of the fish. You would not see anything from the outside. Other fish I have found worms are certain types of grouper (red grouper and Nassau grouper in the Bahamas), large mahi-mahi and a mutton snapper (once). I believe they are only seen in warmer waters with reefs as AJs from the Gulf of Mexico or the Med don't have them. I will try to take a picture next time I fillet a fish that has them (hope you don't get disgusted)

please post the fillet pictures, its the first time that I heard a fish has this kind of parasites....
 
I've seen worms sticked at the tip of the fins of some pikes but never seen, in flesh... I bet they are like tequila ones :D
 
we dont have near the worm problem they do in south Florida here, usually limited to aj's over 80 and even then very limited worms. Speckled trout also get good worm action but its nothing a swim in lake Crisco cant cure...
 
Wish I had seen this thread a few days ago. I just cut up a 25# red that had a few nice worms in it. After taking them out it tasted just fine. :) It's a common occurrence down here. Something you expect to see. The norm rather than the exception. Next time I get one with some worm action I'll take some pix and post them for you all to see.
