Baked grouper

Ingredients:
  • a six pounds gouper
  • one red onion
  • one kilo of potatoes
  • some rosemary
  • a dry white wine glass
  • olive oil, salt and cayenne pepper
Recipe

Capture a six pounds grouper – if you are able to or purchase one - and clean it. In an oven tray lay sliced potatoes, chopped red onion and some rosemary, then put the grouper on this ingredients and dress with olive oil, salt, cayenne pepper and wine. Bake it for two hours (or twenty minutes every half a kilo) with twohundred c°. With this main course drink a typical sardinian dry white wine, called “vermentino”.
