A Seafood Pie from New Zealand.

Ingredients:
c. 1 lb. fish fillets
3 cups of mashed potato
4 hard-boiled eggs
Spinach – blanched (boiled 1 minute in pot of water
1 cup grated cheese

White Sauce:

2 tablespoons flour
2 tablespoons butter
2-3 cups milk
Salt and pepper



Preparation Instructions:
Melt butter in a pot on the stove top until melted. Whisk in flour. Add milk VERY SLOWLY stirring constantly until mixture resembles the consistency of paint. Stir in salt and pepper. (Note: Can microwave, ensuring to stir at 45 second intervals to avoid lumps in the sauce).

Place the fish on the bottom of a buttered ovenproof dish. Slice the eggs and arrange on top of the fish pieces. Add the spinach. Pour the white sauce over top of the ingredients. Spoon the mashed potato over and then sprinkle with the grated cheese.

Bake at 350 degrees for about 40 minutes or until golden on top.
 
Looks good!! Pies are always a good way to use up a bunch of random fish I find, when they're not big enough or of one kind to use as a main on their own.
