Landed this 8 kg Fulvie as we call them here otherwise known as Yellow Spot Kingfish.

Anyway was told about this recipe and loved it.

Self raising flour, fish spice and a small packet of salt and vinegar crisps crushed. Add water to make a stiff batter. coat the bite sized skinless fish pieces and deep fry in oil until light golden colour, do not over cook.

Dipping sauce. Mayonnaise, sweet chilli sauce (equal quantities) and tsp fish spice. Mix. Serve with a salad and fried chips.
 
Uh, I would substitute beer for water in that recipe but I'm no professional chef. Check with agbiv.
 
Never heard of salt n vinegar crisps in batter but it sounds like a good idea.

All I need now is a Pollock and I'll give it a go
 
i don't know know how to fry but i want to know.. how it will baked into delicious food...
