Steak or fillet out a good size white fish like a White Sea Bass or a Halibut. Salt and pepper the pieces and put them aside. Melt a Tbs. of coconut oil in a pan and then add enough of your favorite hot sauce to make things interesting, stir it around until fragrant. Pour a can of coconut milk into the pan and whisk in. Reduce the heat to simmer and put the fish in the pan. Poach about 4 minutes on each side until just flaky. Set the fish aside on a serving platter mounded with rice. Correct the seasoning in the coconut milk, add the juice of half a lime and simmer until it thickens. Pour this over the fish and rice and garnish with minced cilantro. This is so simple a kindergartner could make it and the result is heavenly!
