How do you cook them?

We have a similar species here called sheephead that I've seen up to about 30 pounds & after taking a few(they're pretty easy to whack here), I decided not to spear any more until I find a way of cooking them. :yack The only thing I've found less palatable is opaleye. :yack:yack

I'm hoping you have a good recipe or two that I can test out ;)

shane?: i think its time you get in touch with Picasso, OMER, Riffe, Totemsub, Cressi-sub and other spearfishing gear manufacturers and tell them that you want to make a movie and they could give you products to test out and you endorse them and basicaly quit your dayjob and just do spearfishing flicks.. you just might get an OScar or two.... hehehe

nice catch...
