Eating milkfish

I know some DB members are dying to ask this, me too. How about eating milkfish (awa, sábalo, chanos etc) ? Mexicans disdain it as trash fish. But reportedly they're loved in Hawaii, Polynesia, Phillipines and in SE Asia, where grown in captivity.

What gives?
 
I've shot 2 large ones in Hawaii - gave 1 to my uncle & 1 to my friend. Both of them told me they don't want anymore. Guess it wasn't palatable enough for them. I know some people make them into fishcakes.

I've caught a couple fishing as well and my fishing companions were always happy to take them off my hands. They enjoyed them, but grew up eating it & it was almost a cultural thing for them.


The smaller ones are popular in the phillipines & cooked in a few different ways. Google "BANGUS" & you'll find a myriad of recipes.
 
Here's a nice big one, the flesh was grey and dark, and we couldn't get filets out of the large fish. There were bones everywhere in the flesh.

The almaco Jack was somewhere around 45 - 55 Lbs, just to provide some size comparison.

I have eaten it quite a few times in the Philippines its there national fish there they love it and it is served at special occaisons, sometimes it tasted OK but its definately one of my favorite fish to eat.
