I just bought my spear gun and I want to land a bunch of fluke/flounder this summer. What is the best way to fillet them? I've caught blue fish and stripers before and I cut the head off and fittel from the tail to the gills each side. What about a fluke, same thing?

cut them straight down the lateral line from the head to the tail...filet out each side.

flip over and repeat....will leave you w/ 4 filets.
