Fish Tacos!!!

this is a really good recipe that ive been using.
1 cup all-purpose flour
2 tablespoons cornstarch
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup beer
1/2 cup plain yogurt or sour cream
1/2 cup mayonnaise
limes
1 jalapeno pepper, minced
1 teaspoon minced capers
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon ground cayenne pepper
1 quart oil for frying
fish fillets, cut into 2 to 3 ounce portions
corn tortillas

To make batter: In a large bowl, mix flour, cornstarch, baking powder, and salt. In a bowl blend egg and beer, then quickly stir into the dry ingredients (its like pancakes, dont over mix).

in another bowl, mix together yogurt and/or sour cream and mayonnaise. stir in fresh lime juice until consistency is slightly runny (about 1/2 a lime should do it). Season with jalapeno, capers, oregano, cumin, dill, and cayenne.

Heat oil to about 325 degrees F (162 degrees C). This part is tricky the batter should stay the same shape when thrown in, but they shouldn't be cooked so fast that they are still raw on the inside.Dust fish pieces with flour, dip into beer batter, and fry until crisp and golden brown. Drain on paper towels. heat up tortillas.

put fried fish in tacos cover with sauce you can add salsa, cabbage, or whatever.
best if eaten with a cold cerveza or margaritas (or 2 or 3 or 4....:friday)

Ah yes! And for the health conscience pan sear the fish in olive oil w/ seasonings. Try SHRIMP!
