I'm making broiled mahi-mahi fish tacos tonight. Naturally they will incorporate cabbage, as is proper, not lettuce (heathen concept!) and white sauce. Anyone else have any variations they want to share?

As a healthier alternative I've been baking my fish (catfish, redfish, tilapia & Seckled Trout). I coat in wing sauce or spicy B-B-Q sauce, layer sliced white onion on top and some charry tomatoes halved. Bake 450'F for 12-14 minutes. I serve on tortillas de maize (corn torllias) that are lighly skillet cooked. Of course with the cabbage and a spoon of pico de gallo.

Condiments are key. Diced cucumbers in sour cream and dill is good. I also like black beans in my tacos and some sliced radish. The most important thing is fresh salsa. Make it with tomatoes, onion, green onion, cilantro, Serrano peppers, salt, pepper, garlic and some sugar or honey. Add some mango or strawberry if you would like a more fruity flavor. Soft shells only!
