fried fish with super dip

I tried this simple yet delicious dip yesterday with fired fish fillets was amazing, yet very simple...

the fish:
1 - fillets of thick fish like grouper cut into thick fingers, marinade lightly in some lime, salt and pepper
2 - Flour
3 - 2 Eggs beaten
4 - FRESH bread crumbs (Just cut the edges off a few toast slices and blitz in a food prcessor) makes soooo much difference versus the dried packagaed bread crumbs, makes it more crunchy...
OPTIONAL: add some dried chilli to the bread crumbs for some heat
5 - Basically coat the fish with flour, then egg(to stick the breadcrumbs) , then breadcrumbs,....
6 - Heat vegetable oil in the pan and dip in the fish until golden, then place on kitchen paper to get rid of the excess oil

For the dip:
1 - cut one red chilly into small slices (remove the seeds if you dont like it too hot)
2 - Grate some fresh ginger
3 - Grate 2 cloves of garlic
4 - Place in a small bowl and add LIGHT (not DARK) soy sauce

sprinle some lime juice on the fish and Dip the fish fingers in the sauce and enjoy!!!
you could use this as a starter, but yesterday it was the main enjoyed with some basmati rice cooked with shrimp and veggies

I reckon It’ll go well with a few Scallops, and it just so happens I have a few in the freezer from the last winter’s haul.
I’ll give it a go and report back with a yes or no.

I'll go get a nice Scandinavian trout tomorrow and then try this Saturday.
 
That sounds delicious Marwan. I reckon bass'd be about right.
Pollack makes good fishfingers too but with the spicing I think Bass would be better.

go and give it a shot sunfish...you could also add some fresh corriander in the mix could be cool
 
Nice recipe Marwan, try using Japanese (Panco Brand) bread crumbs. They're really light and crunchy giving a totally new mouth feel and texture.
