Gourmet Burger

Here is a recipe for homemade burgers:

Gourmet Burgers


Starting with an empty stomach, mix the crumbs of two slices of fresh white bread with about 400g of minced FILLET steak or lamb,
chopped fresh garlic,
1 beaten egg
dash of tabasco
1 tblspoon balsamic vinegar
bit of lemon juice
salt and freshly ground pepper

Make two big patty rounds with them and leave to set in the fridge for about 45 mins. Watch a bit of TV, talk to your wife, take the rubbish out.

Then fry them slowly, preferably on a cast iron griddle if you have one.

While waiting for the patties to cook, get two big Portugese rolls from your local baker, split in half and toast them (inside part only) under the griller. (You should preferably buy them before you cook the patties :duh )

Make a white sauce
30g butter, melt in a pan then mix 2 tablespoons of cornflour or cake flour to form a roux, heat gently for a couple of minutes, remove from heat and whisk in a cup of milk, black pepper, salt.
Fry up some chopped oyster mushrooms and mix those in the white sauce, simmer until it thickens.


Filling

Mix a couple of tablespoons of mayonnaise and chutney together, and baste on one side of the rolls.
Put a slice of lettuce and tomato (the mayo/chutney mix stops the lettuce from sliding out ), your favourite pickles

Then take the patty, cover in the mushroom white sauce, and one slice of good cheese, like Monterey Jack, Vermont White or similar, ground black pepper on top. Grill under the grill till cheese melts.

Pile it all together, lettuce and stuff on the bottom slice of roll, then place the burger patty with the sauce and melted cheese carefully on top, with the other half of the roll to finish....

no need to mention the fries to match..

mmmmm it was REAL GOOD.

What the hell is a portuguese roll? Is it a byproduct of cooking in a silk teddy?

lol!!!!!!

Have you ever been to Nandos? A Portuguese roll is not a olive skinned dark eyed gentleman helping me undo my apron strings but a large crusty floury white roll... not so much like the typical hamburger roll (which are boring).

Traditionally they are roasted in a clay oven.

They are also known as prego rolls... (but without the prego filling )
