Greek Octopus and Macaroni

For all of you that enjoy eating Octopus, here is a nice tasty and above all simple recipe.
Note The recipe calls for 1.5 cups of Olive oil this sounds like a lot however it will be very dry if this is not followed remember there is no oil in octopi!
I used Octopus Vulgaris for this which only has one row of suckers instead of the two on the med octopus, it was fine.

1 Kg Octopus
500g short macaroni
500g ripe fresh tomatoes(canned is OK if out of season)
1 cup of wine red or white
1.5 cups of Olive oil
1 large onion finely diced
salt and pepper

Chop the 'Pus into medium pieces and wash well.
Put into a pot and boil on a moderate heat until all the water has been absorbed usually 30 mins or so.
Add the finely chopped onion and oil and cook until the onion softens, stirring with a wooden spoon.
add the wine and skinned crushed tomatoes +salt and pepper.add a little water to bring the liquid level up to the top of the solid stuff.
When the octopus has softened add a little more water and the macaroni.
Serve as soon as the macaroni has cooked and most of the water has been absorbed.

Serve with a green salad and a nice wine.

How much of the 1.5 cup olive oil you use at the first time to boil the octo? and do you add any water with oil to boil it for first time or just little oil is enough? How long to boil it?

I just tried octo pickle but couldn't done it. I did not boil it enough.
 
Ahh my mistake.
It should read: boil until all the water is absorbed.
I am going to edit the recipe now.
