Take some scallops,
and add a dash of olive oil, some crushed garlic and chilli flakes.

put under a very hot grill, and turn regularly, until just starting to brown.

Tis the season for scallops, so I add them to my favourite dish risotto with peas and smoked pancetta. Fry the smoked pancetta without oil and then add oil to the pan and fry the scallops.

man the title sounds good nuff to eat! just had some smoked oysters, yum.

:pSounds scrummy. Haven't thought about scallops in a while. Chilly flakes eh:hmm. Re. Podges suggestion for extra "greenary", spring onions are good too, and leaks with scallops seems to be a classic combination (I prefer spring onions though).

Scallops cooked in their shells add a nice dimension, smell plays a big part in taste & smoldering shell has a certain appeal!
A simple method involves cleaning the shucked flesh & dropping the scallop into the preheated shell that has been under the grill for a few mins. Add a knob of garlic butter, a squeeze of lime & a sprinkle of parmesan at the same time & grill till cooked.
The trick is to get the shell very hot first so the butter caramelises to give a beautiful nutty flavour :)
You will need to make a ring from tinfoil to support the shell.
