Quinoa Salad:
Combine all ingredients in large bowl and enjoy with tortilla chips, in a wrap, or as a side! Great for lunch and dinner or snacks!
2 cups cooked quinoa
2 tomatoes
1 bunch of cilantro
1/2 onion
5 garlic cloves
1 jalapeño
1/2 capsicum (green or red pepper)
1 can black beans
1 can corn
1 tbsp cumin
1/4 or 1/3 cup olive oil
1 tsp salt
juice of 2 limes
