lyonnaise potatoe and fish pie

This is a very easy and tasty recipee and is difficult to get wrong!

Step one - make lyonnaise potatoes in a oven dish:

Place a bit of butter on the bottom of the dish or olive oil for a less rich tast
Place a single layer thinly sliced potatoes in dish
Sprinkle a bit of salt on pepper on the layer
Layer thinly sliced onion rings on top
Repeat above depending on how much you want - finish with a layer of potatoes.
Cook in oven for about 20mins or untill nearly cooked.

While that is going on fillet and skin fish. Amount depends on how much you want/size of dish (or how much you caught :) ) - single layer of fish is best

When potatoes are nearly cooked remove from oven
Smother top of potatoes with generous layer of creme fraish
place fish fillets on top and cover with them with creme fraish also
dot around with plenty of cherry tomatoes
Generous twist of black pepper
Sprinkle on parmesan cheese to taste

Place back in oven untill fish and potatoes are cooked and cheese is golden.

Optional is a layer of cheese between each layer of potatoes and it might be best to cover potatoes proir to adding fish.

Oh oink! :D Obviously a dish for cold weather with hard physical labor outofdoors but well worth logging a back forty with that waiting in the oven. Mercy!
