I have been doing CO2 and O2 tables (dry) for a couple of weeks. My O2 tables end with:

Vent/apnea
2:00 3:45
2:00 4:00
2:00 4:00

My question is, how would I figure out my max?

You probably won't answer and that's okay.

I will try at the end of this week. Is it better to pick a target? I was thinking of trying to go to five but I'll quit after 40 contractions. I really don't want to BO even though I have a great spotter.

When you don't want to BO, take small steps, and make sure your body and mind are in consistent (good) form, allowing you to be more certain about the weight and type of sensations.

As for a goal, you state it already pretty clear. I think you want to explore the trajectory of sensation until you samba, in order to know in future dives where your at.
I think this pretty nice goal that may work very nice.

On the other hand it also could increase fear.
Maybe you can rephrase it into:
"I want to explore my body and it's sensation to a deep level."

Also know the possible signs of the end of your Apnea, the main ones: trembling body part, starting tunnel vision, ringing in the ears.

But just a question out of curiosity, why you have this strong desire not to BO?
<I don't mind if you keep the answer to yourself, I just though it might be a helpful question for you>

Kars, thanks for the response. I will definately take small steps. Today I could not relax and I could barely manage 3:50 but I'm okay with that. I did 67 dives yesterday (20 to 25 m) so I might just need more rest.:)
