My winter Project is ???????

Every year around this time I start to think of things to do during the quiet months of winter.

My thought this year is to smoke my own fish and a few questions popped in my head



1) what wood chippings are best to start with ?

2) can I use frozen fish, might be a daft question but there you go?

3) Do I have to fillet and salt before smoking?

4) how long do I leave the fish to smoke before its cooked ?

5) can I freeze the smoked fish and do I have to recook it when its thawed out ?

6) and finally HOW THE HELL DO I BUILD A SMOKER

I know a few of you guys have smokers already so if you have any pictures it will be great to see them


 
Ask my bro Foxfish. He is the original fountain of wisdom re smoking. I only catch 'em I don't cook 'em. I have picked up a few pointers like there is 2 sorts of smoking Hot and Cold. Cold just flavours the fish prior to other methods of cooking later while hot flavours and cooks it. Will say though that the best smoked fish is wrasse. Smoking greatly improves pollack and smoked mackerel is okay too. Smoked mullet is another good one.

North1 one is your man on building a smoker, his is awesome, looks like a professional bread oven from Pakistan. V jealous.

Ps I have sacks of shredded bay leaves/trees which smell awesome and smoke like crazy. V welcome

Foxfish is the man to ask about smoking fish! What he doesn't know aint worth knowing.......

Ive been reading a lot of his posts on smokers, that way I wont be asking him questions he hasnt already covered in other posts

Heres a link to a very simple smoker on youtube which Im going to use first before building a proper smoker in the garden. Who ever made the video seemed to get side tracked by his dog roflrofl
