So I was poking around the web looking for an online CO2/O2 table to do some practice.

I found a couple of sites, this one seems the best: http://freediving.orangellous.com/

Is this the "best" one out there? I'm asking because I was considering building one... But I don't want to reinvent the wheel.

Don't bother with this, there are mobile apps for O2/CO2 tables. I have one for android called unaerobic and there is one for iphone too. Mobile app is much better than some website, you can practice it anywhere.

Yeah iholdbreath is my new fav app and i have seen massive improvements in my breath hold because of it
