Skate??

Thread Status: Hello , There was no answer in this thread for more than 60 days.

Does anyone have any skate dishes they would like to hook me up with???? I've been told, if not overcooked, skate is very delicate & delicious.

Flour both sides. Fry in buter crisp both sides and if need be cook a little in the overn though recrisp in pan....can the used butter in the pan and some caeppers and darken the buter on med heat. Pour on skate and eat

Why not start with the classic ? Remember Skate will benefit from being stored in the fridge for a couple of days after killing . You will need 3tbl spoons white wine vineger , 1tbl spoon lemon juice , 45g unsalted butter , 1tbl spoon capers ( soaked if salted ) , 1tbl spoon chopped fresh parsley , salt , pepper , this for 450g of Skate . Put skate in large pan , pour over vineger , season with salt & pepper , add water to cover , bring to gentle simmer , turn heat down & poach for 10 - 15mins ( just cooked ) . Take fish out , add lemon & keep warm . Melt butter in small pan , turn up heat till it browns , remove from heat , add capers & parsley , pour over skate & serve . :)

Traditionally skate wings were cut into little round plugs and sold as scallops. Any good scallop recipe would work on skate just as well.
 
Yo! Skate is great! I've caught a few and the fish market in my store carries it occassionally ($8.99/lb). Remember that skates are in the shark family and eliminate urine out of the skin--any amonia smell indicates it's turned. It'll stink up your house and taste aweful.:head

A good recipe below that also works well on other white fish (whole scaled & finned or fillets). Avoid oily fish like mackeral. Used it alot on largemouth bass!

1 large baking pan lined in foil or a disposable aluminum pan. Spry it down with non-stick olive oil spray. I also line a cookie sheet with foil to place beneath the baking pan to catch any boil over & minimize clean up.

4 skate fillet 1 1/2 -2 1/2 lbs.
1 lb P&D (peeled & deveined) shrimp (large or xlg)
EVOO - extra virgin olive oil
1 onion chopped
1 green bell pepper seeded & chopped
2 stalks celery chopped
1 box thawed frozen sliced okra or equivalent fresh sliced
handful celery leaves diced
2 jalapeno pepper seeded & diced
*for really hot add a habanero seeded & diced or several mashed chili piquins (grow wild here in TX)
1 28oz can diced or crushed tomatoes (canned has a richer flavor)
onion powder,oregano, basil, cajun seasoning
lemon or lime juice (I often use concentrate)

Spray pan, place fillet in (or small whole fish);squirt w/ citrus juice;drizzle with EVOO (stolen fro Rachel Ray); dust w/ onion powder & cajun spice; if using piquins or habanero add now; cover with veggies; add dried spices & dust with cajun seasoning again. cover over all with tomatoes & juice.

Bake at 400' F for 45 minutes. Serve with rice--I've been leaning towards red,brown & wild mixes.
