Stiff Fins

I currently use a set of of open heel fins for my diving that seem to work ok. They are long plastic fins. I am on the larger size but am slowly starting to head into deeper water.
The questions I have are-
What are the advantages in using closed foot pockets?
Would stiffer composite blades be better suited for someone like me?
Are carbon fins the be all and end all?
Any help would be greatly appreciated.
