Walk the Plank Salmon

1/4 lb peeled and de-veined shrimp per person. Use 35/45 count.
1 4-6 oz skin on salmon fillet per person
EVOO extra virgin olive oil (okay it's a Rachel Ray thing, I'll tell you in person sometime)
lemon juice
blackening seasoning

Preheat oven to 500'F.
  • Place salmon portions skin side down on foil covered baking sheet
  • Squirt down with lemon juice (or lime) allowing to sit 2 minutes. Coat lightly with oil.
  • Plank (layer) shrimp tightly to cover fish surface. Lightly coat shrimp with oil.
  • Liberally sprinkle with blackening seasoning.
  • Bake for 12 minutes. Turn to Broil for 3 minutes. Just watch them to prevent burning.

That sounds good & I think I could manage that -- what's blackening seasoning though? Pretty sure we had that quite often in restaurants in the USA but not something I've seen in the shops, or back here in Blighty.
