Brett: I'm cooking this one tonight it's brilliant BBC - Food - Recipes: Sea bass with rocket pesto
also try these individual fish pies:
enough mixed fish (some smoked fish will add to the flavour) and poach in a little milk, pepper & saffron
When just cooked, take out the fish and use the remaining milk to make a roux sauce
Place the fish in dishes (you can add a prawn or scallop now if you want) pour over enough sauce just to coat the fish, sprinkle with grated cheese & bread crumbs and cook - DELICIOUS
This is my friends that I copied the recipe from.........

Nice that! I have had 2 meals recently from my 10lber bass bricks, griddled crispy with a scoop of pea puree and lemon zest mash as listed in the Hugh F'in Ate It All Fish book.:t Tasty treats...
