Whitebait Patties

Thread Status: Hello , There was no answer in this thread for more than 90 days.
It can take a long time to get an up-to-date response or contact with relevant users.

Got given some nice fresh whitebait from the Marlborough Sounds. I made some patties with just enough egg to hold the bait together and a little salt. They were delicious.

How do you cook your whitebait?

Jalepenos may detract from the flavour too much for me. Next time have have heaps I'll experiment.
Yesterday a guy told me he caught 200lb in one day all by himself!!! (I wonder how many patties he could have made?)
 
Take the seeds out of the jalapenos w/ vegetable peeler & soak for 30 minutes in cool salt water. DO NOT touch eye or nose until you've washed hands & doused in lemon juice. Removng seeds & soaking tones down the heat of the pepper but leaves the sublte flavor behind. Or just make two extra patties for me w/o peppers!
