roflHi I am interested on how productive spearfishing is in the winter in Cornwall, what species of fish are available. Do results justify getting in or should I wait for warmer days?

Hello Jake and welcome to Deeper Blue.
It’s always worth a look through the winter but most of the time its just that, a look.
If I lived in your neck of the woods I’d get the surf board out through the winter and enjoy the waves before you get invaded by the tourists again next spring.

Jake, Podge is essentially right, however if you do fight the cold off, and also avoid the winter swell and churn, you essentially have a Lotto chance at most species including random Bass.
In summary, vis is not good, freezing cold and they are schooled up deeper. I believe certain offshore marks will be productive for the winter cod etc.
Winter is a good time to survey holes and ledges for the summer....
I'll be in front of my fire though rofl

Judging by the extraordinary winds currently swirling round the UK, there won't be any visibility for several days.

After late November things usually get pretty quiet (i.e. few if any fish) and rough (weather/sea), in my experience. The only way to be sure though is to "suck it and see" - if conditions improve drastically. Reputedly, not all bass leave. Flat fish may remain in sheltered areas. Not sure what mullet do in winter. Crabs/lobby's/shellfish? Winter mackeral taste best I think - but I buy those, rather than catch them.
