A couscous fish recipe..

It can take a long time to get an up-to-date response or contact with relevant users.
Here's a delicious couscous fish recipe info:

Ingredients:
  • 1 pound of white fish fillets, such as cod or halibut
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 teaspoon of paprika
  • 1/2 teaspoon of ground cinnamon
  • Salt and black pepper to taste
  • 1 cup of instant couscous
  • 1 cup of vegetable or chicken broth
  • 2 tablespoons of olive oil
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1/2 cup of raisins
  • 1/2 cup of slivered almonds
  • Juice of 1/2 lemon
  • Fresh parsley, chopped, for garnish
Instructions:
  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the cumin, coriander, paprika, cinnamon, salt, and pepper.
  3. Place the fish fillets on a baking sheet and sprinkle the spice mixture over both sides of the fillets.
  4. Bake the fish for 15-20 minutes, or until it is cooked through and flakes easily with a fork.
  5. While the fish is cooking, prepare the couscous. In a medium saucepan, bring the broth and olive oil to a boil.
  6. Remove the pan from the heat and stir in the couscous. Cover the pan and let it sit for 5 minutes.
  7. Fluff the couscous with a fork and stir in the onion, garlic, raisins, almonds, and lemon juice.
  8. Place the couscous on a serving platter and arrange the fish on top.
  9. Garnish with chopped parsley and serve.
