Last night at the Preview of his new DVD, gtb showed the cooks preparing the day's catch and there were two recipes that really caught my attention. The first is a cilantro pesto for pouring over fried fish. Anyone know how to make it? The other, should some kind soul print the recipe, will gain the eternal gratitude of the entire forum. Roughly, you begin with a long fish fillet and wrap it around Philidelphia cream cheese in a big spiral. Then, it looks like that's wrapped in bacon? The wheel is then sauteed in a panfull of vegetables like bell pepper, mushrooms, baby carrots, etc., with white wine. Awright, out there, we gotta know how it's really done, y'hear? I'm drooling all over the keyboard in anticipation!
 
The pesto
1 1/2 cups of fresh cilantro, Firm Packed
1/2 cup of parsley, firmly packed
1/2 cup of parmesan Cheese
1/2 cup of vegetable Oil
1/4 teaspoon salt
3 cloves Garlic
1/4 cup Pine Nuts, 1 oz

Place all ingredients in food processor workbowl fitted with steel blade or in a blender container; cover and process until well blended. Makes about 1 1/4 cups Pesto. Servings: 4

The fish? well the trick is to have good sized pieces of bacon and stitch the whole thing up with wooden skewers until its cooked ;)

For those of more Northern palates, an excellent version of this can be made using melted butter instead of vegetable (olive!) oil. My dearly beloved recommended its use on pasta!
