abalone casserole

One good sized Ab pounded whole and sliced diagonally
One pound good jack cheese
Large can of roasted green chile

Fill up a 2" high casserole dish. ab, pepper, cheese and so on. Bake for one hour 350 degrees. Add cheese to top and brown the cheese. Serve and stand back.

This recipe is found in the big Betty Crocker cook book for calamari.

Mart I would guess that it’s a bit like your Ormer’s?
Batt, Jack Cheese? Would that be like a strong tasting Cheddar?
 
Not so sure mate, they might look like an ormer but I dont think they taste the same.

hi guys - abalone are similar to calamari steaks in texture but if prepared properly can be even more supple (less chewy). Braising them is also a good way to prepare them. And they make an excellent chowder too.

They really pick up the flavor of whatever you cook them with ( usually garlic and butter) The mollusk itself has a mild flavor. I have a friend who swears by cooking them in duck-fat and won't eat them any other way :duh

and Paul, Jack Cheese is very mild - not sharp or strong like some cheddars - more like a cross btwn a muenster cheese and a mozarella.
