Clam Chowder for 2

I am not sure that this is hunting, gathering yes anyway...
Last weekend the tides were really low, so I took the opportunity to do a bit of clam digging.
After an hour of digging I had approximately 1/4 of a bucket of clams and a few cockles this is the recipe that I used to deal with them.



1 Slice streaky bacon, sliced
1 Small Onion or 2 Shallots, chopped fine
1 Stick celery, chopped fine
1 Tablespoon butter
1 1/2 cups milk
1.5kg Clams in shells steamed open=400g clam meat
1/2 lb potato
1/4 cup chopped spring onion tops


1. In a heavy saucepan sauté the bacon, the onion, and the celery in the butter over low heat, stirring, until the celery is softened, add the milk, the clams with the liquor, and the potatoes, peeled and cut into 1/2"inch dice, and simmer the chowder, stirring occasionally, for 15 minutes, or until the potatoes are very tender.
2. Stir in the Spring onions greens and salt and pepper to taste.(I didn't need much salt as the clams were salty anyway)

serves 2 normal people or 1 hungry clam digger
