"Guten Tag" and "Auf Wiedersehen" are understood universally. "Servus" is informal but can mean both "Hi" and "Bye". "Hallo" is also acceptable if you want to talk to somebody and is not as informal as "Servus". "Grüß Gott" is more Austrian, I think, but more and more people here are using other phrases e.g. just "Morgen" to greet somebody in the morning. If you need help from someone, I would start the sentence with "Entschuldigung, ...".
