Ireland Spearing 2012

On the topic of fish some eat and others dont, whats peoples attitude towards dogfish, my brother took a couple and said they tasted very good, dont think id fancy them myself....


Took one last autumn as I'd wanted to try it for a long time. Very pleasantly surprised. A lot more flavour than I was expecting. Nail through its head to hold it and pulled the skin off with a pliers. Cutlets marinated for an hour then breadcrumbed and fried. Nice texture and flavour.

yea he said the same...nice flavour to it... might try one myself.... he searched youtube how to skin them... said he ended up standing on its head and ripping the skin off...
 
Hi folks, may i just offer a reminder that this year in addition to the Fish of the Month competition and Fish of the Year comp', there is also the species [speccie] hunt happening over the year. The discussion is here:

I now realise that not everyone was aware of the speccie hunt, which is hopefully going to add some extra fun to the years fishing - there's no prizes - but it will be interesting to see who brings in the greatest variety of fish...

If you see 'rock salmon' for sale in your local fish and chip shop then you will be eating dogfish...:t Lovely eating in my opinion!
 
I like that tip for dealing with the bones Pedro. If I ever take another conger I,ll try that. I'd never take a big conger as no-one but me will eat it. Is there much difference in taste between big and small conger?

A bigger conger is somehow different, I would dare to say it like more noble flavour...! The taste is more consistent and you won´t fine so many bones, bigger congers tend somehow to "loose" them. Restaurants in my home town never take congers less than 10/15kg and that´s the main reason for.

minor note: when frying that 1/3 part, do slighthy over frying in order to be crunchy, it´s delicious! :)

I do love dogfish...! I have no problem to spear them since that I proudly eat them. We have a "family recipe" that I would like it to share. It works perfectly with not only with dogfish but all the shark family, if you try with ray, you will do it over and over again.

The principle is extremly easy:

- Boil the Ray/dogfish/blue shark..... in a pot with salt as much as you would like (leave it the cooking water!! You will need it ahead!!);
- In a pan apart slice thin slices of 2 good onions (2 onious per +- 2lb of uncooked fish). Add a good amount of olive oil and garlic. When it starts to get golden coulour, and paprika. If you like hot flavour, or add pepper for example or substitute paprika for smoked paprika. Add the water in small amounts in the way that the water will be almost dry after more less 2 minutes. Repeat the process about 4 to 6 times and try that sauce in order to be good for you of salt flavour (from the cooking water...be patient with this process!).

- Boil potatoes apart

-Serve the boil fish with the boil potatoes and over aplly this sauce... The combined flavour is simply unforgetable.

Just on a final note that I wanted to share/question for a long time but I completly forgot since that it´s also a great discover for me. I got about 2years ago the book "Irish Seaweed Kitchen", by Prannie Rhatigan and I must say that I never ever imagine how fantastic seeweeds could be (we all tried for sure nori/laver before but the edible range is way bigger than a single seeweed reality). I love dilisk... Usually buy it in a local fish shop.. eat it as a snack... Gives you a great thirst... nothing like a feed of dilisk on a summers day and into the pub for a few pints
 
I love it ! But I can't get the Mrs to eat Fish never mind seaweed !She will be in for a surprise in the next salad !!I might end up wareing it tho!!!
 
Hey Pedro, Prannie lives near Mullaghmore and does some demos with Source cooking school in Sligo. She is obviously passionate about seaweed. If enough people wanted it I am sure she would do a demo for us over a weekend.
 
got out this today for about 3 hrs... viz was only from 2 to 3 metres at best and the swell was biggest we've been in yet... didnt see any fish whatsoever so mainly went looking for crab and lobster... only saw 1 lobster but he retreated into his hole very quick and had no joy getting him, even with my homemade snare... just picked up a couple of spider crabs... in the pot now and gonna make some crabcakes later... had a good laugh though especially coming out through the surf and getting tossed all over the place...
