Lobster recipes?

Thread Status: Hello , There was no answer in this thread for more than 60 days.
It can take a long time to get an up-to-date response or contact with relevant users.
BBQ lobster, like it;). I think on of the SA spearos posted some cool pics of a 'brai"(?) of a lot of crays some time ago.quote]

thats a Braai MR X and its the south african word for a BBQ :) Lobster finished off on a braai with a few castle lagers to wash it all down.......heaven :):)


foxfish that pictures got me hungry for more lobster. Question, how do you know when the claws are done?
 
Scott, I pre cook the fish for two mins a lb so its just a matter of heating them up but you can tell because steam will appear from the cracked claws.
 
Ok here goes.... this won't be for everyone but i love it.

Take freshly caught lobster.... kill, remove claws boil for 2mins and eat.
Take tail from head section and throw tail in the freezer for a rainy winters day!

On Rainy winters day..... remove tails from freezer and let defrost.
Split shell and remove tail meat
chop tail meat in to bite sized chunks and dry with kitchen paper
season chunks with salt and pepper and a drop of lemon juice then roll in flour
Then , roll floured chunks in beaten egg and then into some freshly made bread crumbs.
Shallow fry in very hot oil for 1-2 mins or until golden brown....

And thats it.... the best home made scampi in the world
Eat with lashings of home made tartar sauce.....and think about good days fishing

Ben sounds good mate. I never freeze lobster and usually eat it the same day I catch it. Is there any noticalble difference to the texture after its been frozen?
 
No, freezing does nothing to the quality of the meat. In fact my GF who finds lobster boiled (even lightly) has too much bite/resist really enjoys the tenderness of the frozen stuff. In fact it may actually be more tender after a stint in the freezer. Don't be tempted to fry for too long as thats sure to make it rubbery!
