I think the waterways model 1 or 2 is a simple design that has been around for a long time.

Design-wise, it is simple and minimalistic. If the person knows what a monofin is... This shape will convey the message.

If it's not too late look at Guidone monofins, not produced (?) anymore, but gorgeous...
