It's a good thing the little buggers are so tasty, because they yield jack compared to bluegill (and jack SQUAT compared to crappie).
I bag them separate so they don't go to waste on a fish fry . In my house, all perch fillets receive a "recipe" - preferably broiled. Don't get me wrong, a perch fry tastes awesome. But, so would a hamburger made from a ground up porterhouse. You smellin' what I'm shovelin'?
