Smoked Cod Roe ???

Thread Status: Hello , There was no answer in this thread for more than 90 days.

I have all the equipment I think. But I've never tried to hot smoke a cod roe has anyone else succeeded ?? Should it be brined beforehand ? I have eaten it before and it was delicious so I would love to make some myself . I suspect Foxfish may have tried this at some point ?? Thanks in advance Neal.
 
It worked very well I simmered the roes in a light brine with some spicing for about 20mins. Left them to dry for half an hour then hot smoked them for about 25mins over oak chippings. I made my own taramasalata roughly following the recipe from the River Cottage Fish book. It was delicous. I'm sure it would also work with a full cold smoke and the spicing could be changed to suit your taste.

Great idea, unfortunately we are a bit to southerly to get cod but, yes I have smoked fish rows before.
Bass & Pollock row, cold smoked for my friends, because I just find the rows a little too fishy for my own taste!
Yours look great though.. well done I would say.
