Smoked Mackerel and Red Chilli Salad

This is a made up one but it works really well. The oily fish and chillis were just meant for each other. Omega oils + raw veg = very healthy. I think you could substitute any oily fish but i would recommend smoking or curing it as this is all about big strong life-affirming flavours :p

Smoked Mackerel Fillets - remove skin & rip roughly into smallish chunks
2/3 birds eye chillis - seeded/unseeded to taste etc. - dice 'em fine
2 heads pak choi - rough chopped
6 carrots - grated
3 tomatoes - halved and chopped greek style
little glug of extra virg or sesame oil

yep, that's it. have a play around with it - let me know what you think. :)
