Wanted: Greenling Recipe

so last spearfishing trip was awful, stormed every day and water was thick like pea soup. did manage to wack a pair of Kelp Greenling off the dock (while clinging for life to the transom of the boat...)

So, what is your favorite Greenling recipe?

All fish are good when deep fried. Try deep frying it in peanut oil, it seems to make it a little bit less mushy
 
Its a pretty steaky fish so try a curry mabee or nicely grilled with corriander, garlic, lemon or lime juice, s+p, chilli and a bit of fish sauce. There is a nice thai recipe that has galangal, palm sugar, coconut milk, kaffir lime leaves, fish sauce, shallots and a clove of garlic. Basically the ling sits in the marinade in a oven tray and cooks in the oven. But whatever you do DONT overcook it.
