My son the student chef always does Christmas Eve and my sister does Christmas dinner. This year he's going to do a pair of guinea fowl on the rotisserie, brined overnight in sugared saltwater and bourbon whiskey. Being a family of Paisani, there will be pasta before, possibly in a new Dungeoness Crab sauce we found in Sunset magazine. It reminds me of my great-aunt Maryanne's recipe that has been legend in the family for generations. (he typed, drooling all over the keyboard)

aw come on! Can that really be any better than the healthy cajun injected deep fried turkey we will have? :eek: Sure sounds like it might be.

I will be getting a fresh sack of oysters off the boat on Friday and maybe a Tur-Duk-En.... :)
 
Mmmmm I wish I had more folks coming here this xmas - havent had an excus to do a deep fried cajun turkey since last easter! MMMMMmmmmmm
 
I am off down south tomorrow in search of whale sharks for Christmas... (umm for viewing!)

Yeah...I dont like eating the whale sharks either...kinda taste like a cross between manatee and spotted owl with a hint of florida panther. ;)

jejeje looking forward to some good lobster though.. mmmmmm Indian Ocean lobster isn't bad... bring on the thermidore sauce.. :p
 
just finished shucking that sack of oysters...took a couple of pics. I'll try to get them up later.
