Whitebait

Anyone know a tasty way to prepare whitebait???

I was thinking of curried whitebait or something with a bit of flavour....

Appreciate any recipes :p , cheers

just deepfried and squeeze lemon it them.... the Spanish and Portuguese seem to have it down to a fine art!

Sounds tasty but all that oil, isn't too healthy is it!!!

looking for a recipe delicious and nutritious......

omega oils and calcium...... all good....
 
Au contrare . . . or however the heck you spell it. If you do it in the Mediterranean style, the oil will be virgin olive and there isn't much that's better for you than that! Admittedly, if one was so inclined to deep fat fry it in lard too often, that might be a bad idea but olive oil is positively good for you. In fact, latest research indicates that it acts as a pain killer on all those aches and pains you accumulated catching the whitebait.

yep, good old extra virgin and a sprinkling of salt. does that remind you of your soldier days Old Sarge? ;)
 
I tried to spear some white bait but there was'nt much left of them after the 7mm shaft went through the 3mm diameter fish.
on a more serious note my mum is from New Zealand and they have beautiful whitebait there, they usually make a light batter and make them into fritters with just enough batter to hold the fish together this will of course be fried and have some oil so if your trying to be health concious just eat a couple of these and a big bowl of salad not 8 or 10 frttters and a heap of chips (French Fries)

Actually, I had an Italian gran-mama. Now there was a woman who understood frying seafood. The memory of her baby calimari brings tears and longing even to this day. :waterworks
