We used to make Billtong from Dorada and other fish when sailing up and down the West african coast. Mighty tasty, we basically marianted the strips in whatever we had in the gallery which usually wasn't much, salt, pepper, vinegar for a few hours, stitched fishing wire through the strips and hung them around the outside of the boat wherever we could, after 2 or 3 days they taste pretty good from being sundried and sea salted, after 1 week even better but they never last that long...
I'm sure some South African here could give a better recipe for fish billtong, my memory is very poor, back then too much alcohol saturation...... :duh
