Best way to cook octopus?

It can take a long time to get an up-to-date response or contact with relevant users.
Seriously, I've eaten dog. It was nice too :) Tried horse once but I wasn't so keen :yack
 
I like horse, but for some reason I feel that eating carnivores is wrong. Not about ethics, this, but it feels unnatural.
 
I agree, don't cook it. Just slice it and eat it raw! Tako sashimi. Yum.
 
I had a horse in spain, dark red meat. i loved it. mmmmmm

couldn't agree more!!! I have a raw horse steak every week. Just eat it raw: extravirgin olive oil, lemon juice, black pepper and bashed juniper bays. You don't need Viagra any more after raw horse! :)

What Baumann said about octopus is true, however. Very smart animal, with an artistic attitude too! But I'm having one for dinner: mors tua, vita mea.
 
Thanks for all the advice. I'm going to avoid the dog recipies and go with Spaghetti's freeze and 35 min boil method. I'm off to Tenerife tomorrow so hopefully I'll get one or two.

How many of you have taken one in the UK? I grabbed one out of a hole just north of Aberdeen (Scotland) about 2 years ago. I had no idea they were so far North. After playing with it for a few minutes we let it go. The tenticles only had 1 row of suckers, not the usual two, apparently that makes it a lesser northern octupus.
 
with one row of suckers it was another species: Eledone Cirrhosa, must be "Curled octopus" in english, moscardino in italian.
These ones don't grow as big as the "authentic" 2-row-suckers octopus. For their being small they can be cooked in more fancy ways.
Here's a 2 persons very classic recipe for small ones:
Moscardini in umido (curled octopus in sauce).
Mince very finely a head of garlic and drop it the pan with five spoons of olive oil, let them heat and, soon as the garlic turns slightly blond, drop in a dozen of those tiny curled octopi.
Roll them with a wooden spoon for a minute or two, then pour in a glass of white wine.
When the wine has steamed off, drop in a can of tomatoes (liquid). Add a little salt, pepper, your favourite spice and one salty anchovie.
Let it cook 30 minutes on a low mild fire.
Serve on slices of toasted bread. Eat it. Then let me know if you liked it! :)
 
As has been posted already, ovenight freezing, then cooked in simmering water - after that can be cooked in many different sauces. I like it with peppers tomatoes onions garlic white wine seasoning!

I've heard talk of soaking in milk for a while to tenderise the meat. Does anyone use this method?

How small are they? Are they small enough for ikizukuri?

average size of the "moscardino" curled octopus is 10 to 20 centimeters testicles included. The ordinary octopus can grow up to 2 meters tentacles included.
For the freezing thing: true it tenderizes the meat, but my thought is: ins't it a pity to eat defrozen stuff while you could it eat fresh? Me I prefer to bash it.

We chuck it on the rocks a few times and then use sand to peel off the skin. Cook, quick fry with other freshly collected shellfish and fish with lots of garlic and there you go. Must say Ive never cooked it for so long so next time my octi will hopefully have nice and tender testicles roflrofl

Hey, I've eaten 'Chupracaba',:t or was it the neighbor's Chow Chow :confused: The Leprechaun told me to do it! I've actually eaten Horse meat, it was called "Pinto Steak" I swear!
