Best way to cook octopus?

Thread Status: Hello , There was no answer in this thread for more than 60 days.
It can take a long time to get an up-to-date response or contact with relevant users.
oh my favourite. we are at the moment in the middle of Octopus season here in Cyprus,
How we cook it

1 freeze it alive
2 thaw it out(remove head and clean)
3 place in a large pot on a very low flame(do not add water)
4 place lid on pot and give it 10 to 15 mins
5 check its not dry, if needed add water(sea if poss)
6 cook for aprox 30 mins it will go a nice pinky white.
7 if eating then add a small amount of olive oil and some garlic.
8 eat.
9 if pickling chop into chunks and place in a jar with good white wine vinegar.

Ps i would also eat my neighbours dog, and his cat. and quite often i eat sheeps testicles halved,fried in olive oil and a touch of thyme. wicked..............

do you cut them in half with your own knife, or do you buy them already halved?

I like octopus, if you ever get a chance to eat in a Galician restaurant, ask for "pulpo a la gallega" gently spicy and melts in your mouth. Not rubbery at all.

When I was a kid my technique was a hundred hard bashes on a large rock. No wonder I pitched (baseball) pretty well later in grade school! :D
 
Spaghetti, i get them free when we buy meat from the village butcher, and they are as the were when cut off, so here is how its done, remove both testi from the sack,and remove the tube that connects them, slice down one side of the testi and fillet the outer skin from the soft inner and slice the egg shaped testi in two so from 2 testi you get 4 halves, shallow fry for about 5 mins and sprinkle with thyme, and thats it, tasty testi, a la sheep.

In a good way of coarse not the having your testicles bashed on the rocks frozen and cut in half kinda tears roflrofl

Spaghetti arent testi "heads" in italian?

Bulls balls are a delicacy in Spain, I hate to think how they prepare those :crutch
 
And then there's the famous American version, "prairie oysters" . . . or have I said that already? :confused:
 
Hi JRH, I think you have inadvertantly caught, & eaten the "Rubber" one's that were lost "Overboard" in a container from a cargo ship that was caught in a "storm", on it's way to America.These "Toy's", were destind for "Toy's R us", about 30,000 were lost, so, if I were you, I would'nt catch any more!

Yeah the infamous Mountain Oysters in NZ :)

Seen a few guys after a bit too many :friday taking bites of some raw ones, not even cleaned up and peeled (but yes, detached from their previous owners). One fellow chowed down the other hurled everywhere. :yack This right before I got mine fried with some onions, not the best look. :martial
 
Recipe from Bobby Flay:friday
Warm Octopus and Sweet Onion Salad with Fresh Basil & Lemon Vinaigrette

Serves: 4

Lemon-Basil Vinaigrette
3 cups fresh lemon juice
1 shallot, coarsely chopped
2 cloves garlic, chopped
Salt and freshly ground pepper
2 tablespoons honey
3/4 cup olive oil
6 basil leaves, finely chopped

Place lemon juice, shallot, garlic, in a medium saucepan and cook over high heat, stirring occasionally, until reduced to a 1/4 cup. Place reduced syrup into a blender, add salt, pepper and the honey and blend until combined. With the motor running, slowly add the olive oil and blend until emulsified. Pour into a bowl and fold into the basil.

Sweet Onion Salad
2 tablespoons olive oil
2 sweet onions, sliced into 1/2 inch thick slices
1/4 cup balsamic vinegar
Salt and freshly ground pepper

Heat olive oil in a large saute pan over medium heat. Add the onions and cook until soft and caramelized. Add the vinegar and cook until reduced; season with salt and pepper.

Octopus
2 pounds octopus, cleaned
2 tablespoons aged sherry vinegar
3 cloves garlic, smashed
1 bay leaf
1 tablespoon black peppercorns
1/4 cup olive oil
Salt and freshly ground pepper

1. Place the octopus in a large pot and just cover with cold water, vinegar, 1 tablespoon kosher salt, garlic and peppercorns in a medium saucepan and bring to a simmer over medium heat and cook until tender, about 3 hours. Remove the octopus from the water and place on a platter lined with paper towels.
2. Heat the grill or grill pan. Cut the octopus into pieces, brush with olive oil, season with salt and pepper and grill for 1-2 minutes on each side.

Assembly
2 cups mixed greens
Lemon vinaigrette
Chopped fresh basil and parsley

1. Toss greens in a large bowl with 3 tablespoons lemon vinaigrette and season with salt and pepper. Place the greens on a large platter and top with the grilled octopus. Drizzle with more of the vinaigrette, top with the onion slices and sprinkle with the fresh herbs.

This is IMHO the best way to eat octopus :!:

As always, first you have to get into the water and grab one of those really "fresh" octopus only we spearos can get :wink:

Ingredients:

Octopus
Small Potatoes ( +- 1 kg )
Onions ( 1 )
Garlic ( 7/8 )
Corianders
Olive Oil
Pepper
Salt



Preparation:

Clean the octopus and wash it very well. Cook it with 1 onion (do not peel it), and after it’s cooked put the salt in the water. The octopus shouldn't be totally cooked, but almost.
Wash the potatoes and cook them in water with salt. Like the octopus, it shouldn't be totally cooked.
Peel the garlic and prick it very well, as well as the corianders .
Put the octopus in a tray (all of the “legs” and the head should be separated), and then put on the top of it, lots of olive oil, the pricked garlic, the corianders and some grinded pepper.
Put it in the oven at 180ºC for more or less 30 minutes.
“Punch” the potatoes and put them on a net tray, above the octopus.
Finally, put the potatoes around the octopus and serve it.
