Hi Ben,
seems that all of us have to try your finest recipes and at end of all try your fantastic cake but this time different shape maybe a fish?In this case better to call it fishcakerofl ?

i got 1 for you to try tony,
When u get ur self a large bass, remove the fillets and place the main bone and head in water with carrots, leeks, onions and bayleafs and simmer for 1 1/2 hours then strain off the fish stock <liquid> in to a new pan now reduce until it begins to go to a carmel colour and add 1/2 a bottle of white wine and reduce again then add 400ml of double cream, (this is called a voulette, dont worry if it looks like a little its ment to be strong and creamy flavour,)
set aside, boil up some jersey royal new potatoes, cut your bass fillets in to 7oz potions and fry in a meduim hot pan skin side down and season the flesh, <shake the pan when u first add the fillet to avoid them sticking> place in a hot oven for 7 mins, crush the cooked new potatoes with alittle butter and throw in some rocket, serve in the centre of the plate with the bass on top, for the sauce add in a few mussels and when there open spoon round the crushed potatoes.
job done, and your wife pleased.

I have been there and been the only diver. However, I have also been there and seen maybe a dozen spearos & 2 or 3 dozen scuba divers, and dozens of anglers over a period of hours; too crowded for me really. Quite deep straight off too. When the wind is out of the east though, the beach is often sheltered. I haven't seen anyone land anything of size there (I'm sure others have) but I have seen a small lobster & a few small fish taken. I recall somebody mentioning they got a crab there too. I've only seen small fish there and occasionally a shoal of mackeral.

Hi guys,
dived portland today with my friend and I met for the first time Podge and Stuckinsurrey, very nice meeting, nice to meet you guys! The water was good and the viz was about 3-4 mt.Lots of plankton in the deeper water, saw a lots of spider crabs but took just a couple, oysters and scallops also in the pot.I saw only a flatty but to small for my stomac,so only starters for dinner for main course will wait next weekrofl .Only a bad news for me that the competition in portland next week is saturday and not in sunday as Scottie mentioned to me,hope to be wrong:confused: .
Many thanks to Ben for the lovely recipe, hope to get the bass as soon is possible can't wait to try it.
