Bass are the restaurants favourite not because they taste so good but because their flesh is so consistent - always white, always mild & always the same taste no matter what the size (as long as they are fresh that is).
I prefer the smaller fish to eat as they look better as a fillet on a plate rather than a steak.
Sometimes very large bass are not filleted at all but cut through as a section & served with the back bone in place.

I tend to vote for the fish that someone has specifically gone out to get, i'm always interested by hearing about the others and the rare ones, but the spearo who plans a trip around a fish is doing it very well.
Like gaz says, those big pollack are great - imagine all the fish cakes...

Yep, there's plenty of merit in that too, as well as the unusual/exotic.
Sunfish, how deep are you diving for those pollack?

The depth varies from around 25 feet to 50 feet. If I'm in a place where I hope to find big ones then sometimes i'd go down 25 or so to the top of a big rock and wait. If nothing big arrives after a few dives and if I feel up to it I'll go down further and swim gently between and around the rocks and down into gullies.
I love very broken ground for pollack. Sometimes in midsummer though good pollack can appear in fairly shallow water. I've seen 7 pounders in water only 3 metres deep when there're lots of sandeel around but I wouldn't go looking for them there.
I seem to remember Tecdave got one of his big ones in twenty metre deep water among rock bomeys in a bit of tide. That's a typical place for big ones to hang out.
If you ever see a shoal of 4 to 6 pounders it's worth just diving repeatedly taking special care not to scare them. There could be an even bigger one that won't approach until you let it get confident.

Broken rocky reef in a bit of current is a great place. Other fish than pollack sometimes come in too. I've had mullet and bass appear where I didn't expect to see either.
The best places seem to be where there's a bit of tidal current but the main thing is to find a place with pollack there. If there're a lot of small fish at the twenty foot mark and you go out to thirty feet and see bigger ones then it's probably worth a good look.

I know Dave got his FotY last year in 5-6 metres and he was not expecting it at all. Another guy caught one of the same size (perhaps a little bigger!?) in even shallower water.
I only like fishing when there is alot of movement in the kelp. I never find it productive when the sediment has been allowed to settle.

It won FOM July 2008.
His fish from the year before last was caught in a more typical pollack situation. I've tried and failed to find an account but all I can find on here is that it was caught on a boat dive from Milford Haven. It was ten pound fifteen ounces. I can't remember where I read that it was in current over bomeys but maybe Dave himself can confirm it.

Dave, I was wondering how far you normally travel to find fish? I always look at the SW of Ireland hoping they will update the image on google earth as it looks stunning and untouched wilderness (as far as I can make out). To what extent would you say you have explored? Can't wait to come over next summer!

I have dived almost everywhere from the Old head of Kinsale to Baltimore and some places outside of that stretch.The best bass ground is east of Rosscarbery and the best pollack ground is west though there are areas that can be good for both.
