Ok first of all Thai fish cakes are made with mostly raw white fish so no potato or cooked fish avoid oily fish too.
This recipe uses rounded measurements so its easy to scale up or down if you wanna freeze some. It should make between 12-15 cakes you are gonna be frying these so try keep them reasonably thin. Try use home-made curry paste or chili paste they are easy to make and freeze for months I can post the recipes if peps want. Failing that go to an asian market or shop and pick one that looks good.
1lb(500g) white fish fillets finely ground
1 tablespoon roasted chili paste or red curry paste (I use half and half)
1 tablespoon fish sauce ( squid brand is good)
1 tablespoon cornflour
1/2 teaspon salt
20z (60g) green beans ends trimmed and finely sliced (these are for a crunch slice really thin)
6 kaffir lime leaves,spines removed and leaves finely slivered (if you can only get dried soak in a little water first)
Put the fish, chili or curry paste,fish sauce,and salt in a blender and blend till smooth. Mix with the green beans, lime leaves and cornstarch and form pattys about 2inches across and 1/2 inch thick. Fry in about 1inch of sunflower or peanut oil till brown and hot through. I have them with salad and a sweet chili dipping sauce, 4parts water to 1parts palm sugar chopped chili and corriander reduce until gloopy but dont put the corrianderin till the end or it will go black.
