mullet beer battered and deep fried are quite good. though I normally leave them be as thers better fish on offer. I took one last night for my son. the big ones are stinky, so I'd never take a big one again.

Heres a bit of Mulletty Thursday evening trivia for you......have you ever heard of geosmin?

The wiki explanation is most straightforward but for the chemists amongst you, well you will just have to google it or something.

Geosmin is responsible for the earthy taste of beetroot and contributes to the strong scent that occurs in the air when rain falls after a dry spell of weather (petrichor) or when soil is disturbed. The human nose is extremely sensitive to geosmin and is able to detect it at concentrations as low as 5 parts per trillion.
Geosmin is responsible for the muddy smell in bottom-dwelling fish such as carp and mullet. Cyanobacteria produce geosmin and 2-methylisoborneol, which concentrate in the skin and dark muscle tissue. Geosmin breaks down in acid conditions; hence vinegar and other acidic ingredients in fish recipes help reduce the muddy flavor.
The smell after a rainstorm is also attributed to geosmin. Therefore.....

Mullet = Stinky (official)

Quick evening action with some more pollacks for my delicious fish tacos recipe. ;)

Of course I can. Finely chop red cabbage, onion and some sweet peppers and marinate them with olive oil, lime, paprika and oregano. Put some salt on the steaks of pollAck and leave them for 30-60 minutes to rest in the fridge. Pan fry the steaks in a grill pan with a little olive oil and add some black pepper and garlic powder, I normally cook at medium heat until nicely golden. Warm up a tortilla wrap and mash on it some avocado, add the marinated cabbage, some jalapeno (yesterday I used two kind together: sweet and mild hot) and the fish. Break a bit the steak to get some flakes and wrap it up. Ready to go!
